Definitely one of my favourite pasta dishes of Sardinian cuisine. The ravioli are made with fresh pasta and contain ricotta and spinach inside.
Cooked in a pot with water and topped with the sauce and a sprinkling of parmesan cheese over, are a pleasure for the palate to try!
The manual process takes time, however, there are tools that allow you to make the ravioli quickly and the same as each other, such as the “stamps” or the special machine for ravioli.
Otherwise, armed with a cutter and a pasta sheeter, you can start making the ravioli little by little.
It will still be worth it!
