Gnocchetti Sardi, a traditional recipe of my country

A dough, a thousand different recipes.

Today we tried to make Sardinian Gnocchetti, better known as Malloreddus, particular processing of the dough that requires a little patience.
The “gnocchi board” is indispensable for making the particular shape, easily available on Amazon at affordable prices. It is a small wooden striped instrument.

Ingredients

250gr of flour
250gr of semolina
1 egg
water if the dough is too dry

Procedure

Once the dough is ready, make a ball and cover with a cloth or cling film. Let the dough rest at room temperature for 15-20 minutes.

Take a piece of dough and roll it on the gnocchi board with open hands, form a thin snake shape, about half a centimetre thick.

Cut the stick into small pieces of about half a centimeter.

Flour the Gnocchi board with a little semolina or flour and, one by one, roll the dumplings by sliding them with a light pressure of the thumb. It only takes a little practice, it is not difficult to create perfect malloreddus.
